COOL RUNNINGS SAMPLE MENU :

Listed below is a selection of Chef Bambi’s cuisine.
There is a Preferance Questionaire below for guests to complete, this enables us to prepare dishes to satisfy your individual tastes.

Breakfast is always served with freshly brewed coffee, tea, fruit juice, toast, breads and preserves.

* fresh fruit plate
* yogurts, muesli and cereals
* a selection of homebaked muffins, croissants or pancakes filled with fruits or served with bacon and syrup
* Creamy scrambled eggs with smoked salmon or cheddar cheese
* Cool Runnings Brekker : Eggs anyway you like, served with bacon, sausage and fried tomato
* Ham and swiss cheese omelette
* French toast wedges served with breakfast sausage and or maple syrup.

LUNCHES :
Below is a small selection of delicious dishes, we constantly add to and change the menu following the availability of the best seasonal ingredients.

All served with bottled water, soft drinks, beer and wine and fresh baked crispy breads.

* Classic fresh tuna salad with green beans, baby potatoes, mimosa and calamata olives served with yogurt mustard dressing.
* Caribbean chicken salad. Served in iceberg lettuce cups. Grilled chicken, mango, red onion, cucumber, sultanas, lightly tossed in a creamy Caribbean curry dressing.
* Gaspacho. This spicey Spanish classic cold soup is served with chopped olives and sour cream garnish. A cheese board, crackers and homebaked wholewheat breads.
* Pan fried Flounder with capers, served with white bean, sweet peppers and feta salad.
* Smoked Mackerel or Shrimp salad. Romaine lettuce, baby tomatoes, green onions, cucumber batons and avocado with Cool Runnings own vinegarette dressing.
*Tortillas. Build your own scrumptious tortilla, a selection of fillings including chicken, beef, tomato salsa, cheese, lettuce, jalapeno’s and sour cream.
*Wild mushroom and bacon linguine pasta served with green salad or Bambi’s own take on Chow Mein.

STARTERS:
* Tuna tataki with asian seaweed salad and ginger dressing.
* West Indies watermelon and goats cheese salad with citrus dressing.
* Caramalized onion, grape and blue chees in feather light puff pastry.
* Asian spring rolls with peanut sauce
* Cape malay samoosas served with fruit chutney.
* Smoked salmon and dill roulades with caviar garnish.
* Mexican and black bean soup served with sour cream garnish.

ENTREES:
* Coconut lime and chilli barbecued shrimp. Island savoury rice and snap peas.
* Mahi Mahi with shrimp cake, grilled and served on sauteed bok choy with sesame, garlic, ginger and soy dressing served with basmati and stir fried red peppers.
* Deboned Cornish hens roasted with plums in red wine served with creamy mash potatoes and seasonal vegetables.
* B B Q Evening : Great steaks or ribs served with mushroom sauce, baked potatoes and ratatoulli.
* Thai shrimp and linefish green curry served with jasmine rice, thai vegetable fry and popadums.
* Pork Tenderloin roasted in mustard and honey sauce served with garlic potato bake, brocolli and almonds.
* Pan fried duck breasts with cranberry and caramalized onion, sauteed potatoes, asparagus.

DESSERTS :
* Pear and almond tart served with Amaretto ice cream.
* Ricotta Cappuccino with crushed Biscotti.
* Chocolate mousse cake with Ganache topping and strawberry garnish
* Fresh blackberry nepoleons with cream chees mousse.
* Amarula and Chocolate Fondue Fantasy.
* Pears in red wine with vanilla ice cream
* Rum crepes with banana flambe`

Cool Runnings is a Leopard 45 catamaran, owned and run by Bambi and Geoff Alexander who provide a warm welcome aboard to all their guests.

This catamaran has a great charter pedigree and is a former Cruising World Boat-of-the-year. She features three lavish queen-sized cabins each with en suite heads and showers, and electric toilets.

All the cabins are air conditioned. The saloon has a CD and Ipod connection, media player linked to TV as well as plenty of games. Her tender is a 12-foot rib with an engine powerful enough to pull you or your guests around the bay.

She also has a two-seater kayak, stand up paddle board and noodles and floaters for the less active guests. There are enough snorkels and fins for everybody.

We, Geoff and Bambi, were born in Cape Town South Africa. Geoff has a Building Science degree from University of Cape Town and had his own building company for 25 years. Bambi started out as a nurse and after the children were born entered the food arena. She had a catering company for 15 years.

We were married in our early 30's and share 5 children and three lovely granddaughters. Geoff has always been into boats and loved dinghy sailing. Once we were married he received a brochure in the post advertising a flotilla sailing holiday in Greece. After a quick deck hand sailing course we flew off to Greece and experienced our first keel boat sailing experience. We were hooked and before long had a small boat of our own.

Once all our children had completed their education, we set off across the Atlantic in our 34 foot monohull called Alexis and many adventures later sold her in America, after being seduced by the Catamaran. We built our second boat Alexis 2, a 38 foot catamaran in Cape Town and sailed her once again across the Atlantic to the Virgin Islands where we chartered for 5 happy years. The cruising bug bit once again and we decided to sail across the Pacific to Australia, enjoy the exotic South Pacific islands and then hang up our sailing shoes and return home to be the best grandparents ever.

The trip was a dream come true, we wallowed in wonderful adventures amongst these exotic islands and eventually sold Alexis 2 in Sydney. Back in Cape Town with the family, we enjoyed fun times and did indeed become excellent grandparents. But.... the inevitable .... we missed the life on the water, the wind, the sea and the freedom and fun of sailing, we missed the interaction of meeting new people and finally decided to share the time between home and chartering. We purchased our beautiful Cool Runnings and returned to chartering. This is where you will find us now. We charter in the Virgin Islands from late December to July. We invite you to join us and we will sail you through these exquisite islands and stunning anchorages!

We, Theo and Augusta van Rensburg, are South Africans (and Namibians!) who love traveling (either by sea, overland with our 4x4r, or by bicycle). Theo was a financial advisor at an Insurance Company, and also had a career as a Solar Engineer. He holds a Yachtmaster Ocean ticket and we have more than 15 000 sea miles under our belts. Augusta is a registered nurse, and also loves cooking and entertaining.

We were married in 1998 and shortly after our 1st anniversary were invited to a marriage retreat, where of course, the dream of ‘going sailing’ was born. Just 18month later, the boat was bought, the house was packed and off we went! We crossed the Atlantic Ocean on our sailboat “Plumbob”, a 30 ft monohull. After 6 months of cruising, we met Geoff and Bambi in Brazil, while sailing on their Catamaran “Alexis”. A fond friendship developed quickly and as it happens with sailing friends, sailed off in different directions.

We spent time in Trinidad, Tobago, Venezuela, Puerto Rico, Bahamas and then ended in Florida where we fell in love with the American lifestyle, and Theo completed his Yachtmaster Ocean course. We then had the opportunity to Captain and chef/hostess aboard a 70’ Azimut motor yacht . Our yearning for the islands took us back to manage Eustatia island for American owners in the British Virgin Islands. There we met up again with Geoff and Bambi who were chartering Cool Runnings, and we spent the next 7 wonderful years on Eustatia in the North Sound. It was our home away from home. We made wonderful friends and gained extensive knowledge of life in the Virgins, the sea, the islands and the anchorages.

When the island was sold, we moved on and used the chance to cycle from Ushuaia in Argentina, to Santiage, de Chile. We returned back to South Africa in 2013 and for the next 2 years, worked on establishing a cheetah conservation farm, bordering the Namib Desert in Namibia. Once the project was completed, we returned back to our home base in Cape Town, where we once again got back on our touring bikes and took off on an extended trip that will take us right through South Africa and Namibia. While temporarily back in Cape Town, we met up once again with Geoff and Bambi during their off season break, and we all discussed the possibility of relieve crew duties during the charter season. Since we really miss life in the Islands we decided to join Cool Runnings as crew from the 2016 season and are looking forward and extremely excited to be returning once again to the blue waters of the Caribbean and sharing the beautiful islands with you on your sailing adventure.

    We are members of the Redfoot Tribe of Wyoming, USA, Very appropriately named by Bambi and Jeff on our recent trip with them through the Virgins. All Seniors, six of us, and we luxuriated on this yacht. The food was exquisite, presentation world-class, and the warmth and friendliness much appreciated. I don't think we have laughed as much for quite some time, taken as many pictures, and tried the patience of Bambi and Jeff with our snorkling "expertise" as we anticipated. They laughed with us. We very much recommend Bambi and Geoff to anyone looking for an outstanding vacation doing "it their way". We're lucky to have found them and most grateful for their fabulous hospitality. They are famous also. Ask them about their whaling experience. One in a million lifetime events....

    We had the holiday of a lifetime on Cool Runnings yacht for a 2 week charter! Bambi and Geoff are the most incredible hosts, chefs, barmen, entertainers, storytellers you could dream of. We saw plenty of islands- always staying in the most private anchorages which was a dream. Lots of tanning up front on the trampoline and incredible snorkelling adventures; island hikes and beach walks. Too many awesome dive experiences to single out just 1- highly recommend you book Cool Runnings for your next holiday! Did i mention that Bambi is the most insane chef? Mouth watering delights.     Where do I start? I guess I'll start off by saying we certainly lucked out when we chose Cool Runnings for our vacation! There were three couples in our party ranging in ages from 41-51, and we all had a phenomenal time! This was our first time to VI - for all of us - and we deferred to Geoff and Bambi for our itinerary, and they did a great job. We experienced amazing snorkeling, beautiful scenery and insanely delicious food. They know every inch of the Virgin Islands and proved to be excellent tour guides. Every mooring was perfect, every meal prepared by Bambi superb...accommodations were spacious and comfortable. Geoff and Bambi are gracious hosts - - just a few days into our vacation, they felt like family, and it was tough leaving them when our vacation was over. Captain Geoff is a patient teacher of sailing - my husband gained a newfound love for the sport - and Geoff seemed to enjoy watching his student learn. There is not a thing we would change, not a single word of constructive criticism. Pure perfection is aboard Cool Runnings. Thank you Geoff & Bambi for the awesome vacation! Chose Cool Runnings - you will not be disappointed.

    A Caribbean Christmas.......it really was as good as it sounds! We were extremely lucky to spend a second time in the BVI's with Bambi & Geoff - first time aboard their new catamaran Cool Runnings. There were 5 of us in our group from South Africa, and you couldn't wipe the smiles off our faces when Geoff collected us in St Thomas and took us by dingy to the boat. It was non-stop fun, laughter and adventure from day 1. The guys luckily had a day of good surf at Apple Bay on Tortola; had beautiful snorkels (our favourite being off Norman Island) and did the most spectacular hike around Peter Island with stellar views of the island chain. Anegada was our favourite island for its remoteness and tranquility and Jost van Dyke for the vibe (and Painkillers). Brewers Bay on Tortola is a majestic anchorage that blew us away. Geoff and Bambi were once again exceptional hosts and wonderful kind people, yummiest food and cocktails and never to be forgotten Christmas Seafood dinner x We cant wait to go back when they are in another chain of island paradise.     We were very fortunate to get both of our kids and girlfriend together for our annual family vacation. This year we wanted some adventure and snorkeling. Cool Runnings offers it all. We were so relaxed with Bambi and Geoff. Wonderful people who allowed us to do as much as we wanted or as little. They really are there for you. The yacht is perfect for up to 6 people (we had 5). Beautiful staterooms, salon, and plenty of seating. We look forward to hopefully one day stepping foot on Cool Runnings again somewhere in the world.     After a destination wedding, we spent our honeymoon chartering Cool Runnings for 4 nights. This type of vacation was a first for us even though we had been to the Caribbean many times. It was truly a wonderful trip from beginning to end. We first stopped at St John's USVI then headed to the BVIs with stops at Norman Island, Peter Island and Jost Van Dyke. All the islands were beautiful. We had time on the beach, relaxed on the boat, did some awesome snorkeling and tried some SUP. Bambi's food was fantastic! You'll read this over and over on other people's reviews and it's all true. We consider ourselves as amateur foodies and she prepared for us top notch 3 course dinners. Geoff was an excellent captain. He tended to all our needs and would taxi us to and from the islands with no hesitation. The service was excellent, we really felt that we were being well taken care of at all times. Their sailing stories were great...it's clear they are very experienced sailors which made us feel completely safe on the catamaran. Would we do a trip like this again? Yes. Would we choose to go with Geoff and Bambi again? Definitely!

    The 10 days we spent on Cool Runnings with Bambi and Geoff last May were perfect in every way. We were pampered and spoiled in very royal fashion by two of the most kind and fun loving people we have ever met. The amazing creations prepared by “Chef” Bambi were as beautiful as they were delicious, and they were delivered to the table by Captain Geoffrey, the only member of her very efficient wait-staff! While we were eating breakfast each morning, a wonderful little “elf” made our beds and cleaned our bathrooms.

    The boat was kept spotless at all times! Our awesome Captain Geoffrey, was a very experienced Sailor who worked tirelessly to make each day’s trip a special memory. As his efficient First Mate, Bambi was always there to assist in anchoring, sailing and motoring. They were both very knowledgeable about the history of the islands and shared many interesting stories.

    They not only knew the perfect locations for every occasion but also how to please every passenger on board. They quickly learned our habits and drinks and snacks just magically appeared before we could even ask for them! Now, back in Dallas almost two months later, it seems like a dream … and it was a dream trip! Geoffrey and Bambi worked together as a spectacular team on this wonderful boat … together proving there is nothing they can’t or won’t do for you … and all you have to do is ask. It is truly a 5 star floating resort!
